S’mores Olive Oil Sourdough
Everything you love about s’mores, baked into a loaf.
Ingredients:
325g water
100g active starter
500g bread flour
10g salt
10g olive oil
130g chopped milk chocolate
100g mini marshmallows
1 sleeve graham crackers, crushed into bite sized pieces
Instructions:
Chop chocolate and crush graham crackers into bite sized pieces. Set aside.
Mix water and starter. Add flour and mix until no dry flour remains. Rest 20 minutes.
Dimple in olive oil and salt. Rest 1 hour.
Begin stretch and folds. Add the chocolate and marshmallows during the first set. Complete 2-3 more sets.
Bulk ferment on the counter for approximately 6 hours.
Fold in graham cracker pieces during shaping. Place in banneton and refrigerate.
Bake at 450°F - 40 minutes with the lid on, 5-10 minutes with the lid off until golden.
